  • 2 x Oriental eggplants or possibly 1 md. eggplant, cut in 1/2 inch cubes
  • 1 Tbsp. Extra virgin olive oil
  • 1/4 c. Finely diced red onion
  • 3 x Tomatoes, seeded and minced
  • 2 Tbsp. Lime juice
  • 2 Tbsp. Finely minced fresh cilantro
  • 1 tsp Finely minced fresh ginger
  • 1/2 tsp Sesame oil
  • 1/4 tsp Salt Cucumber slices or possibly tortilla chips

Direcciones

  1. 1. In large bowl, combine eggplant with extra virgin olive oil. Place on a parchment-lined baking sheet. Cook in a preheated 400 F oven for 20 to 25 min or possibly till eggplant is golden brown and tender. Remove and cold slightly.
  2. 2. Return eggplant to bowl and toss well with onion, tomatoes, lime juice, cilantro, ginger, sesame oil and salt.
  3. 3. Spoon mix into a serving dish. Let stand for up to 3 hrs. Serve with cucumber slices or possibly tortilla chips.
  4. Yield: 6 servings Prep.
  5. Time: 10minutes
  6. Cooking Time: 25 min.
