Receta Eggplant "Guacamole"

Ingredientes
- 2 x Oriental eggplants or possibly 1 md. eggplant, cut in 1/2 inch cubes
- 1 Tbsp. Extra virgin olive oil
- 1/4 c. Finely diced red onion
- 3 x Tomatoes, seeded and minced
- 2 Tbsp. Lime juice
- 2 Tbsp. Finely minced fresh cilantro
- 1 tsp Finely minced fresh ginger
- 1/2 tsp Sesame oil
- 1/4 tsp Salt Cucumber slices or possibly tortilla chips
Direcciones
- 1. In large bowl, combine eggplant with extra virgin olive oil. Place on a parchment-lined baking sheet. Cook in a preheated 400 F oven for 20 to 25 min or possibly till eggplant is golden brown and tender. Remove and cold slightly.
- 2. Return eggplant to bowl and toss well with onion, tomatoes, lime juice, cilantro, ginger, sesame oil and salt.
- 3. Spoon mix into a serving dish. Let stand for up to 3 hrs. Serve with cucumber slices or possibly tortilla chips.
