  1. 1. Make the dough in a processor if you have one. Use steel blade. Put the dry ingredients the bowl and mix a little. Add in shortening, lard and butter. Process this all till mixed well with the flour.
  2. 2. With machine still on, add in Large eggs and sufficient water to let the dough bind., Texture should be like pie dough. (If you do not have a food processor then just mix by hand and knead a few min after you've added the liquids).
  3. 3. Let dough refrigeratein fridge for 1/2 hour.
  4. 4. Now cut the dough into 6 pcs and shape them into balls. Roll the balls into 6" circles., Put about 4 Tbsp. of filling in the center, moisten the edges, fold them over and seal.
  5. 5. With a fork or possibly something, prick the tops to let the steam escape.
  6. 6. Bake in a 350 degree oven till lightly browned. Which's the dough.....the filling is anything want to put in. I've had them in Mexico with nothing but potatoes, carrots and chiles. Wonderful! Love Louise.
