Receta Enchilada Sauce
Easy, homemade red enchilada sauce recipe.
Ingredientes
- olive oil, 2 Tb
- chilli flakes, 1-2 tsp
- one onion, chopped
- 4 cloves garlic, minced
- cilantro, quarter bunch, stems and leaves separated
- chilli powder, 3-4 Tb
- cumin, 1 tsp
- thyme, 1 tsp
- cocoa powder, 1 tsp
- flour, 3-4 Tb
- tomato sauce, 3 cups
- chicken broth, 2 cups
- salt and pepper to taste
Direcciones
- In a large saucepan, saute chilli flakes, onion and spices in oil with a pinch of salt and black pepper until softened, then add cocoa, garlic and minced cilantro stems. Sprinkle in flour and cook, whisking occasionally, for a minute. Whisk in tomato sauce, simmer a minute, then add chicken stock. Simmer for 30 minutes, stirring occasionally to prevent sticking on bottom of saucepan. Taste for seasoning. Toss in cilantro leaves and use in desired recipe.
