Receta Fagiolini Verdi Al Pomodoro (Green Beans With Tomatoes)

Ingredientes
- 2 lb green beans
- 4 Tbsp. extra virgin olive oil
- 2 x cloves garlic, slightly mashed
- 1 lb minced tomatoes, peeled
- 1/2 tsp sage, crumbled salt and pepper
- 6 x black olives, minced or possibly sliced (6 to 8)
Direcciones
- Rinse and trim the beans. Cook in just sufficient lightly salted boiling water to cover. When the beans are barely tender, drain and reserve. Heat the oil in a large saucepan and sauet the garlic till golden brown, then throw away it. Add in the tomatoes, sage and salt and pepper to taste. Bring to a rapid simmer and cook, stirring frequently, for 10 min. Stir in the beans, reduce heat and simmer gently till the beans are tender and the sauce has thickened slightly. Add in the olives just in time for them to heat through before serving.
- Serves 6-8.
