Receta Filling For Pupusas

Ingredientes
- 1/2 lb Coarsely minced cooked pork, chicken or possibly beef
- 1/2 lb Grated Monterey Jack cheese
- 1/2 c. Minced onion
- 1/4 c. Minced celery
- 1/4 c. Minced sweet bell pepper
- 1 x Clove garlic, chopped
- 1 c. Refried beans, above
- 1 Tbsp. Lard or possibly bacon drippings
- 1/2 c. Shredded lettuce
- 1 lrg Tomato, diced
Direcciones
- In a small skillet, heat bacon drippings. Add in garlic, celery, onion and garlic. Fry till onion is transparent and vegetables are tender. Remove from heat and add in beans, lettuce, tomato, cheese and meat. Toss to blend.
- In center of each raw tortilla, spoon about 1/4 C filling. Fold tortilla in half and seal with a bit of water to make a dumpling. In a skillet, heat 1" of corn oil to 375 degrees. Cook each dumpling in oil for 3 min per side or possibly till golden. Remove, drain on a rack and serve with salsa.
