Receta Fish Balls And Spaghetti Sauce

Ingredientes
- 5 med. or possibly 3 large cat fish, skinned
- 1/2 c. finely minced fresh parsley
- 2 to 3 green onions, tops only, minced
- 3 med. cloves garlic
- 1/2 c. romano or possibly parmesan cheese
- 1/2 loaf French bread, soaked and squeezed
- 3 large eggs (or possibly substitute)
- Salt and pepper to taste
- 2 T extra virgin olive oil or possibly drippings
- 2 T flour
- 2 c. thinly sliced onion, white or possibly yellow
- 2 sm. cans tomato paste
- 1 can tomato sauce
- 2 c. fish stock
Direcciones
- Boil fish in salted and peppered water for about 20 min. Cool sufficient to handle and pick off bones. (Reserve stock). Put together ingredients above and shape into balls. Fry in veg. oil, browning all sides. Set aside. Pour off most of oil and add in 2 tbsp extra virgin olive oil and make sauce. You may use your favorite spaghetti sauce or possibly the following.
- In extra virgin olive oil or possibly drippings, brown 2 tbsp flour. Add in 2 cups onion, tomato paste, tomato sauce. Stir to blend. Add in fish stock, Simmer 1 1/2 to 2 hrs. Don't add in fish balls till about 20 min before serving. Fish balls absorb much sauce. Serve over spaghetti. 8 servings.
