Receta fish with lemon and tomato

Ingredientes
- 2 Tbsp olive oil
- 2 lb chopped onions
- 3/4 cups coarsely chopped garlic cloves
- 1/4 cup molasses
- 1/4 cup brown sugar
- 1 quart lemon juice
- 3 Tbsp salt-reduced soy sauce
- 1/2 tsp white pepper
- 19 lbs fish filets or steaks 6 oz each
- 4 lb sliced tomatoes
Direcciones
- In a large, heavy skillet, saute onions in oil until tender (10 minutes)
- In a blender or ood processor, blend garlic with molasses, sugar and enough lemon juise to make a paste.
- To the onions, add remaining lemon juice, garlic puree, soy sauce and pepper. Bring mixture to a boil, lower heat and simmer until thickened (1 hour)
- When the sauce is almost done, preheaat oven to 450 F. Arrange fish on baking pans.
- Spread each serving with a generous tablespoon of the sauce and two tomatoe slices. Cover pans tightly with foil and bake until fish starts to flake (20 minutes).
- Remove foil, turn the oven to 500 F. and bake for 5 more minutes.
