%3C/p%3E%3Cp%3EMr.%20Ninj%20described%20it%20as%20%22better%20than%20restaurant-quality%22;%20I'm%20calling%20it%20my%20new%20go-to%20dessert.%3C/p%3E%3Cp%3EBut%20wait%20--%20there's%20more:%20it%20is%20ridiculously%20easy%20to%20make.%3C/p%3E%3Cp%3EHow%20easy?%20Well,%20can%20you%20boil%20water%20and%20use%20a%20spoon?%20Then%20you%20are%20imminently%20qualified%20to%20make%20this%20cake.%3C/p%3E%3Cp%3EI'm%20participating%20once%20again%20in%20the%20From%20Scratch%20Club's%20virtual%20book%20club;%20currently,%20we%20are%20cooking%20from%20Sherri%20Brooks%20Vinton's%20Put%20'Em%20Up!%20Fruit.%20Every%20two%20weeks,%20the%20group%20is%20assigned%20a%20different%20seasonal%20fruit%20or%20group%20of%20fruits%20to%20preserve%20(put%20'em%20up)%20and%20then%20incorporate%20into%20a%20recipe%20(use%20'em%20up).%20And%20we%20share%20our%3C/p%3E%3Cp%3Eresults%20with%20the%20rest%20of%20the%20group%20(and%20I,%20with%20you).%3C/p%3E%3Cp%3EOur%20first%20fruit%20group%20was%20strawberries%20and%20rhubarb,%20the%20classic%20early-summer%20duo.%20I%20decided%20to%20cheat%20a%20little%20bit%20and%20use%20my%20roasted%20strawberry-rhubarb%20jam,%20since%20Sherri's%20book%20included%20recipes%20both%20for%20strawberry-rhubarb%20jam%20as%20well%20for%20roasted%20rhubarb%20(which%20was%20very%20similar)%20--%20and%20I%20had%20already%20made%20a%20bunch%20of%20jars%20of%20my%20jam.%3C/p%3E%3Cp%3ELucky%20for%20you,%20one%20of%20Sherri's%20suggested%20recipes%20for%20using%20the%20jam%20was%20this%20flourless%20chocolate%20cake%20(topped%20with%20the%20jam).%20Frankly,%20I%20tried%20this%20recipe%20because%20I%20was%20pressed%20for%20time%20and%20happened%20to%20have%20all%20the%20ingredients%20in%20my%20pantry,%20but%20it%20turned%20out%20to%20be%20an%20excellent%20choice.%3C/p%3E%3Cp%3EWhat%20a%20cake!%3C/p%3E%3Cp%3EIt's%20very%20dense%20and%20chocolately,%20but%20not%20overwhelmingly%20so.%20I%20have%20often%20been%20nonplussed%20by%20flourless%20chocolate%20cake%20ordered%20in%20a%20restaurant%20because%20they%20are%20often%20too%20cloyingly%20chocolatey,%20too%20filling.%20This%20cake%20is%20more%20like%20a%20very%20rich,%20dense%20brownie.%3C/p%3E%3Cp%3EAnd,%20while%20the%20cake%20is%20amazing,%20it%20is%20absolutely%20swoon-worthy%20with%20a%20dollop%20of%20strawberry-rhubarb%20jam,%20which%20gives%20is%20just%20a%20hint%20of%20tartness%20to%20balance%20all%20the%20sweetness.%3C/p%3E%3Cp%3ESo%20I'm%20setting%20you%20up%20with%20a%20very%20stealthy%20dessert:%20decadent%20and%20classy%20yet%20super%20quick%20and%20easy.%3C/p%3E%3Cp%3EAre%20you%20ready%20to%20make%20me%20that%20promise%20yet?%3C/p%3E%3Cp%3EFlourless%20Chocolate%20Cake%20with%20Strawberry-Rhubarb%20Jam%20(from%20Put%20'Em%20Up!%20Fruit)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EButter/grease%20an%208-inch%20or%209-inch%20round%20cake%20pan%20and%20line%20the%20bottom%20with%20parchment%20paper%20(grease%20the%20top%20of%20the%20paper,%20too).%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20in%20either%20a%20double%20boiler%20or%20a%20heat-proof%20bowl%20set%20over%20a%20pot%20of%20simmering%20water.%20Stir%20until%20smooth.%20Turn%20off%20the%20heat%20and%20add%20the%20butter,%20whisking%20until%20melted%20and%20incorporated.%20%20Remove%20from%20the%20stove.%3C/p%3E%3Cp%3ECompletely%20whisk%20in%20the%20sugar%20and%20salt,%20followed%20by%20the%20eggs%20and%20the%20coffee.%20Lastly%20whisk%20in%20the%20cocoa%20until%20the%20mixture%20is%20smooth.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pan%20and%20bake%20for%20about%2030%20minutes,%20until%20the%20top%20looks%20dry.%20Cool%20in%20the%20pan%20for%205%20minutes%20and%20then%20invert%20the%20cake%20onto%20a%20plate%20to%20finish%20cooling.%3C/p%3E%3Cp%3EServe%20each%20slice%20topped%20with%20strawberry-rhubarb%20jam.%3C/p%3E){kind=link}
