Receta Fresh Broad Bean And Mint Soup

Ingredientes
- 1 Tbsp. Vegetable oil
- 1 x Onion
- 2 x Cloves garlic
- 2 med Potatoes, minced
- 1/2 pt Vegetable stock
- 1 1/2 lb Broad beans. shelled
- 1 x Lemon, juice of
- 1/2 pt Single cream or possibly soya lowfat milk
- 1 sprg mint minced Mint leaves for garnish Salt and grnd black pepper
Direcciones
- 1. Heat the oil in a large pan and add in the onions and garlic, cook till the onions begin to soften.
- 2. Add in the potato and stock to the pan.
- 3. Meanwhile cook the broad beans in boiling water for about 5 min.
- 4. Bring the soup to the boil and simmer for 20 min. Add in the beans and stir.
- 5. Leave the soup to cold then add in the lemon juice, cream and mint. Puree till smooth.
- Season to taste.
- Garnish with mint leaves.
