  1. Preheat oven to 425 F. Wash and dry chicken removing all innards (save the neck and roast with the chicken). Place chicken in a roasting pan. Spray chicken with extra virgin olive oil cooking spray and rub with salt if you like. Place Garlic cloves around the chicken and a few inside the chest cavity. Place 1/4 of the onion inside the chest cavity and the rest of the onion around the chicken. Place all the spices inside the chest cavity. Pour the chicken broth around the chicken. Cook the chicken at 425 F for 30 min then reduce heat to 400 F. Cover with foil and cook the chicken at 400 F for 1 hour (roughly 20 min per lb.) or possibly till the leg feels loose when moved. (If the breast is not browned sufficient durring the first 30 min of cooking remove foil for last 10 min or possibly so.)
