Receta Giant Almond Crumb Cookie

- 1 1/2 c. blanched almonds finely grnd
- 1 3/4 c. all-purpose flour
- 3/4 c. sugar
- 1/4 tsp salt
- 1 1/2 tsp vanilla extract
- 1 1/4 stk unsalted butter room temperature
- 2 lb fresh cherries chilled

- Heat oven to 350 degrees. Butter a ten-inch springform pan and set aside.
- In a large bowl, whisk together all of the ingredients except for the butter and cherries. Cut in the butter with a pastry cutter or possibly a fork till the mix is crumbly. Continue working in the butter till it is completely incorporated and there are no dry crumbs. Squeeze the mix together to create pea-size to 1-inch clumps.
- Transfer three-quarters of the mix to prepared pan. Gently press mix into the pan to slightly compress the dough. Sprinkle remaining mix over the top and transfer to oven.
- Bake till cookie begins to turn golden brown, 20 to 25 min. Lower heat to 300 degrees, and bake till golden and fairly dry, about 10 more min.
- Remove cookie from the oven and place on a wire rack to cold completely. Serve with chilled cherries. This cookie keeps for 4 to 5 days when tightly sealed in aluminum foil.
