- Line giant muffin tin (12 cups) with paper baking cups; set aside. 1 c. oat bran 2/3 c. sugar 5 teaspoon baking pwdr 1/2 teaspoon saltIn large bowl, put together all dry ingredients. Make a well in center of ingredients. 1 1/2 c. low-fat lowfat milk 1/2 c. oil 2 teaspoon grated orange peel 1 1/2 c. minced, peeled apple or possibly fresh/frozen blueberries
- Put together flour and sugar; cut in butter, set aside. (May substitute cinnamon/sugar mix to top muffins, if you like.)In medium bowl, put together egg, lowfat milk, oil and orange peel. Add in all at once to dry ingredients. Stir till just moistened. Gently mix in fruit. Divide among cups and sprinkle with topping. Bake in 400 degree oven for 20-25 min. Serve warm.
