Receta Gingered Golden Beet Salad

Ingredientes
- 1/2 c. fresh orange juice
- 1 Tbsp. grated fresh ginger
- 1/2 tsp grnd cinnamon
- 4 x golen beats cooked peeled and shredded
- 2 x zucchini shredded
- 1/2 c. coconut lowfat milk
- 2/3 c. plain yogurt fresh mint ties to garnish
Direcciones
- In a small bowl combine orange juice ginger and cinnamon.
- In a large bowl combine beets and zucchini.
- Toss with juice mix.
- Let sit for about 2 hrs.
- Pour off excess liquid.
- In a small bowl combine yogurt and coconut lowfat milk and toss with salad.
- Garnish with mint.
- Coconut lowfat milk adds a fusion touch to this marinated vegetable starter.
