- 1 1/2 cups all-purpose flour
- 1/2 tsp each baking soda, ground nutmeg and salt
- 1 egg
- 1 cup mashed ripe bananas
- 1/2 cup eggnog
- 1/3 cup brown sugar
- 2 tbsp canola oil
- Glaze
- 1/2 cup icing sugar
- 1 tbsp eggnog
- big pinch (or two) nutmeg

%20with...nut-meg%22%20and%20then%20I'd%20turn%20both%20into%20a%20flirtatious%20glaze%20to%20be%20brushed%20all%20over%20the%20top%20of%20my%20banana-nut%20muffins!%20Now%20I%20just%20have%20to%20learn%20how%20to%20sing.%3C/p%3E%3Cp%3EThe%20glaze%20is%20very%20easy%20to%20make.%20You%20simply%20whisk%20together%201/2%20cup%20icing%20sugar%20with%201%20tbsp%20of%20eggnog.%20Since%20nutmeg%20has%20become%20my%20new%20favorite%20spice,%20after%20hearing%20John%20Legend's%20song,%20I%20added%20a%20couple%20big%20pinches%20of%20it%20to%20the%20glaze%20as%20well.%3C/p%3E%3Cp%3EOnce%20smooth,%20the%20glaze%20is%20ready%20to%20be%20brushed%20on%20top%20of%20the%20muffins%20followed%20by%20another%20sprinkle%20of,%20you%20guessed%20it,%20nutmeg!%3C/p%3E%3Cp%3EI%20tested%20one...then%20ate%20two%20more!%3C/p%3E%3Cp%3EI%20could%20have%20easily%20eaten%20another.%20It%20was%20tough%20not%20to%E2%80%A6.especially%20with%20the%20sweet%20eggnog%20and%20nutmeg%20glaze%20on%20top!%3C/p%3E%3Cp%3EThawed%20frozen%20bananas%20make%20mashing%20bananas%20easy!%3C/p%3E%3Cp%3EWhen%20bananas%20hit%20that%20overly%20ripe%20stage,%20where%20they'll%20stink%20up%20anything%20you%20carry%20them%20in,%20I%20put%20them%20in%20my%20freezer%20so%20I%20can%20use%20them%20later%20for%20making%20muffins%20and%20quick%20breads.%3C/p%3E%3Cp%3EWhat%20I%20like,%20is%20when%20they%20defrost%20they%20get%20mushy%20inside%20making%20them%20a%20cinch%20to%20mash!%3C/p%3E%3Cp%3EGlazed%20Eggnog%20Banana%20Nut%20Muffins%3C/p%3E%3Cp%3EBanana,%20eggnog%20and%20walnut%20muffins%20topped%20with%20a%20sweet%20glaze.%3C/p%3E%3Cp%3EMakes:%2012%20Muffins%3C/p%3E%3Cp%3ETime%20to%20prepare:%2015%20minutes%20Time%20to%20cook:%20%2018%20to%2020%20minutes%3C/p%3E%3Cp%3ESpray%20a%2012-cup%20muffin%20pan%20with%20cooking%20spray.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20flour,%20baking%20powder,%20baking%20soda,%20nutmeg%20and%20salt.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20egg,%20bananas,%20eggnog,%20brown%20sugar%20and%20oil.%20Add%20to%20dry%20ingredients%20and%20mix%20just%20until%20moistened.%20Gently%20fold%20in%20walnuts.%20Divide%20batter%20evenly%20among%20the%2012%20muffin%20pan%20cups.%20Bake%20in%20a%20375F%20oven%20for%2018%20to%2020%20minutes%20or%20until%20a%20toothpick%20comes%20out%20clean.%20Remove%20muffins%20from%20pan%20and%20let%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3ETo%20make%20glaze,%20in%20a%20bowl%20whisk%20together%20icing%20sugar,%20eggnog%20and%20nutmeg%20until%20smooth.%20Brush%20on%20top%20of%20muffins.%20Lightly%20sprinkle%20with%20a%20few%20pinches%20of%20nutmeg.%3C/p%3E){kind=link}
