  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon xanthan gum (omit if your flour blend contains it)
  • 1/2 cup walnuts, finely chopped (use a food processor if you have one)
  • 1/2 cup dried cranberries, unsweetened or fruit juice sweetened
  • 1 cup light sour cream
  • 1 extra large egg, lightly beaten
  • 1 banana, peeled and mashed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
