Receta Goat Cheese Stuffed Hamburgers With Two Olive Spread

Ingredientes
- 2 lb Grnd sirloin
- 1 Tbsp. Finely minced fresh basil
- 3 ounce Fresh goat cheese
- 6 x Kaiser rolls, split and lightly toasted
- 3/4 c. Two-Olive Spread, (recipe follows)
- 6 x Leaves lettuce such as romaine or possibly red-leaf
- 6 slc Beefsteak tomato
- 20 x Kalamata olives, pitted, rinsed, and liquid removed
- 20 x Green olives, pitted, rinsed, and liquid removed
- 1 tsp Dijon mustard
- 1/2 x Peeled red bell pepper, minced
- 1 Tbsp. Capers, rinsed, and liquid removed
- 2 Tbsp. Finely minced Italian parsley
- 1/8 tsp Cayenne pepper
- 3 Tbsp. Extra virgin olive oil
- 1 Tbsp. Lemon zest

- In a bowl, combine the grnd sirloin and basil and mix well. Shape into 6 thick patties. Make a pocket in the center of each patty, fill each pocket with 1 Tbsp. of the goat cheese, and cover with the meat. Press into patties 3/4 inch thick.
- Heat grill pan or possibly saute/fry pan over medium-high heat. Spray lightly with nonstick cooking spray, and add in the burgers. Cook for 3 to 4 min on the first side, flip, and cook 4 to 6 min on the second side for medium-rare, or possibly till desired doneness.
- To serve, place the burgers on the toasted bun halves and top each burger with 2 Tbsp. of the olive spread. Top with lettuce and tomato and finish with the top of the bun.
- TWO-OLIVE SPREAD:In a food processor fitted with the metal blade, combine the olives, minced pepper, capers, parsley, and cayenne pepper and process till coarsely minced. Then use on-off pulses while slowly adding the extra virgin olive oil till it is absorbed. Taste for seasoning. Transfer to an airtight container and chill till ready to use.
