Receta Great Pumpkin Cookies

Ingredientes
- 1 c. flour
- 1/2 c. quick oats
- 1/2 c. shredded coconut
- 2 tbsp. wheat germ
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 c. softened butter
- 1/2 c. firmly packed brown sugar
- 1/2 c. sugar
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 c. Libby's solid pack pumpkin
- 1/2 c. raisins
- 1/2 c. minced walnuts
Direcciones
- Combine first 7 ingredients in a bowl. Cream butter and sugars in large mixer bowl. Add in egg and vanilla; beat till fluffy. Add in dry ingredients alternately with pumpkin, beating well after each addition. Stir in raisins and nuts. Drop by rounded Tbsp. onto lightly greased cookie sheet. Spread with metal spatula to 3/8 inch thickness. Bake in moderate oven (350 degrees) 15 to 20 min or possibly till lightly browned. Cold on racks. Makes 2 dozen.
