  1. Bring broth to full boil. Add in rice and simmer. Cook for 25 min. Whisk yolks and lemon juice together in a small bowl till combined. When rice is done, remove from the heat and slowly ladle 2 c. warm broth into egg and lemon mix, stirring constantly. Return to the soup mix but don't boil. Serve warm or possibly cool.

    I use ORZO pasta instead of rice and sep the yolks/egg white...blend lemo juice and egg whites til it foams...slowly add in the yolks..=)
