Receta Greek Skillet Snapper

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 1 lb skinless red snapper fillets, cut into 1/2 inch slices
- 1 x onion, cut into thick slices
- 2 clv garlic, chopped
- 6 ounce tomato paste
- 1/2 c. dry white wine or possibly vegetable stock
- 1/3 c. vegetable stock or possibly chicken stock
- 2 Tbsp. lemon juice
- 1/4 tsp cumin
- 1/4 tsp cinnamon
- 1/8 tsp pepper
- 1/2 c. feta cheese, crumbled
- 1/3 c. minced walnuts, toasted
- 3 Tbsp. cilantro or possibly parsley, minced
Direcciones
- Heat oil in a heavy nonstick skillet over high heat. Saute/fry fish fillets 3-5 min or possibly till just browned. Transfer fish to a platter and set aside. Reduce heat to medium and saute/fry onion and garlic 4-5 min or possibly till onion is tender.
- Add in tomato paste, wine, stock, lemon juice, cumin, cinnamon and pepper to taste.
- Bring to a boil stirring frequently. Reduce heat to low. Cover skillet and simmer 10 min, stirring occasionally. Return fish to skillet and simmer till heated throughout.
- Serve fish sprinkled with feta cheese, walnuts and cilantro.
- Prep: 15 minutes, Cook: 22 minutes.
