Receta Greek Style Loin Roast

Ingredientes
- 3 lb boneless pork loin roast
- 1/4 c. extra virgin olive oil
- 1/4 c. lemon juice
- 1 tsp oregano
- 1 tsp salt
- 1 tsp freshly-grnd black pepper
- 6 x garlic cloves chopped
- 1 c. plain yogurt
- 1 x cucumber peeled, minced
- 1 x garlic clove crushed
- 1/2 tsp crushed coriander seed
- 1/4 c. chopped red onion
- 1/4 tsp crushed red pepper
Direcciones
- Place pork loin in large resealable plastic bag. Combine remaining ingredients except Spicy Yogurt Sauce; pour over pork in bag. Seal bag and chill overnight.
- Remove pork from marinade, throw away marinade. Place pork over drip pan on grill. Grill over indirect heat in covered grill till meat thermometer inserted reads 155 degrees, about 1 to 1 1/2 hrs. Let rest 10 min (internal temperature will rise slightly upon standing) before slicing thinly to serve with Spicy Yogurt Sauce.
- To make Spicy Yogurt Sauce thoroughly mix all the ingredients together in a bowl and refrigeratetill ready to use.
- This recipe yields 6 servings.
