Receta Green Bean Salad

Ingredientes
- 12 ounce fresh small green beans ends trimmed
- 8 x fresh mushrooms sliced
- 1/2 c. minced red onion
- 3 Tbsp. canola or possibly corn oil
- 1 Tbsp. balsamic or possibly red wine vinegar
- 1 x garlic clove chopped
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
Direcciones
- Cook the green beans in a large pot of boiling water for 5 min; drain. Plunge the beans into a bowl of ice water to stop the cooking and retain their bright green color. Drain and place in a large bowl.
- Add in the mushrooms and onions to the beans; toss to mix.
- For the dressing, whisk the oil into the vinegar in a small bowl; add in the remaining ingredients and pour over the green beans. Toss lightly. Serve immediately.
- This recipe yields 4 servings.
- Serving size: About 1 c..
- Comments: The green beans can be cooked in advance and chilled, but don't add in the dressing till just before serving or possibly the beans will discolor. For a slightly different texture, allow the sliced mushrooms to marinate in the vinaigrette for an hour before combining with the beans and onions. The mushrooms will lose some of their crispness but will become permeated with the flavor of the dressing.
