  • 1 1/2 lb shrimp, shelled and deveined
  • 3/4 c. coconut lowfat milk (188 ml)
  • 1/3 c. lime juice, freshly squeezed (84ml)
  • 3 x cloves of garlic, chopped
  • 1 tsp salt (5ml)
  • 1 tsp grnd pepper (5ml) Peanut Sauce
  • 3 Tbsp. extra virgin extra virgin olive oil (45ml)
  • 5 x cloves of garlic, chopped
  • 1 bn scallions, green and white parts chopped
  • 2 Tbsp. fresh ginger, chopped (30ml)
  • 1 x medium green pepper, stemmed, seeded and finely minced
  • 1 x medium red pepper, stemmed, seeded and finely minced
  • 2 x fresh tomatoes, peeled, seeded and finely minced
  • 1 1/4 c. coconut lowfat milk
  • 1/2 c. creamy peanut butter
  • 5 Tbsp. freshly squeezed lime juice
  • 1/4 tsp cayenne pepper
  • 1/2 c. cilantro, freshly minced (125ml)
  • 1 x salt and pepper

Direcciones

  1. Rinse the shrimp and pat dry. Place in a large sealable plastic bag. In a bowl, combine the coconut lowfat milk, lime juice, garlic, and salt and pepper. Pour the marinade over the shrimp and place in the fridge to marinate for 30 min.
  2. Preheat the grill to high.
  3. Remove the shrimp and throw away of the marinade. Pat the shrimp dry and bring to the grill. Oil the grill liberally to avoid sticking. Cook the shrimp for 2 min per side till pink. Brush them with some of the peanut sauce after the first flip.
  4. Sprinkle the remaining cilantro into the sauce just prior to serving.
  5. Peanut Sauce:In a saucepan over medium heat, sweat off the garlic, scallions and ginger in oil. Add in the green and red pepper and continue to cook for 5 min. Add in tomatoes and cook for another 2 min till some of the liquid has evaporated.
  6. Stir in coconut lowfat milk, peanut butter, lime juice and half of the cilantro. Reduce the heat to low and continue to cook uncovered for approximately 10 min till the sauce beings to thicken. Adjust the seasoning and set aside till it is time to serve.
