Receta Grilled Squid With Chillies ( Calamari Ai Ferri Con Peperoncini )

Ingredientes
- 6 med squid no bigger than your hand
- 12 lrg fresh red chillies seeded and very finely minced extra virgin extra virgin olive oil sea salt and freshly grnd black pepper
- 8 Tbsp. oil and lemon dressing (qv)
- 225 gm rocket leaves
- 3 x lemons

- Clean the squid by cutting the body open to make a flat piece.
- Scrape out the guts keeping the tentacles in their bunches but removing the eyes and mouth.
- Using a serrated knife score the inner side of the flattened squid body with parallel lines 1cm apart and then equally apart the other way to make cross hatching.
- To make the sauce put the minced chilli in a bowl and cover with about 2.5cm of the oil. Season with salt and pepper.
- Place the squid (including the tentacles) scored side down on a very warm grill season with salt and pepper and grill for 12 min.
- Turn the squid pcs over; they will immediately curl up by that time they will be cooked.
- Toss the rocket in the Oil and Lemon Dressing.
- Arrange a squid body and tentacles on each plate with some of the rocket.
- Place a little of the chilli on the squid and serve with lemon quarters.
- Serves 6
