Receta Groundnut Stew

Ingredientes
- 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
- 3 tbsp. veg. oil
- 1 pound beef stew meat, cut into 1 inch pcs
- 2 med. onions, minced
- 1 med. green pepper, minced
- 1 (28 ounce.) can tomatoes, cut up
- 1 teaspoon salt
- 1 to 2 teaspoon grnd red pepper
- 3/4 c. peanut butter
- Mashed sweet potatoes or possibly warm cooked rice
Direcciones
- In a large saucepan or possibly Dutch oven, brown chicken pcs in warm oil about 15 min; remove from pan. Set aside, reserving drippings. Add in beef, onion and green pepper to drippings; cook till beef is brown and onion is tender. Drain off fat. Stir in undrained tomatoes, salt and red pepper. Bring to boiling; reduce heat. Cover; simmer 30 min. Add in chicken pcs; simmer 20 min more.
- In small saucepan heat peanut butter over low heat. Stir into chicken mix. Return mix to boiling; reduce heat. Cover; simmer 20 min more. Skim off fat. Serve with mashed sweet potatoes or possibly warm cooked rice.
- Makes 8 to 10 servings.
