Ingredientes
- 4 tsp extra virgin olive oil
- 4 x cloves garlic chopped
- 1 med green pepper minced
- 16 ounce black beans cooked
- 1/4 tsp oregano
- 1 Tbsp. white vinegar
- 2 x pimientos chopped salt and pepper to taste
- 24 ounce cooked rice cooked
Direcciones
- Heat the oil in a skillet, add in the pepper and garlic and saute/fry for about 3 min. Stir in beans, oregano, vinegar, and pimientos. Add in salt and pepper to taste. Reduce the heat, cover and simmer for 5 min. Spoon over cooked rice and serve.
