Receta Harvey Girl Orange Pancakes

Ingredientes

  • 2 c. unbleached all-purpose flour
  • 1/4 c. sugar
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 2 lrg Large eggs Grated zest of 2 oranges
  • 1 c. fresh orange juice
  • 1 c. lowfat milk
  • 1/4 c. vegetable oil
  • 1/2 c. minced fresh orange or possibly tangerine sections

Direcciones

  1. In a large bowl, combine the flour, sugar, baking pwdr, and salt. In another bowl, whisk together the Large eggs, zest, orange juice, lowfat milk, and oil. Combine the mixtures with a few swift strokes. Mix in the orange sections. Don't overmix. The batter will be thin.
  2. Heat a griddle or possibly heavy skillet over medium heat till drops of water sprinkled on the surface dance over it, then lightly grease. Using a 1/4-c. measure for each pancake, pour the batter onto the griddle. Cook till bubbles form on the surface, the edges are dry, and the bottoms are golden, about 2 min. Turn once. The second side will take about 1 minute to cook. Serve at once or possibly keep hot in a 200 degree oven till ready to serve.
  3. This recipe yields about 16 pancakes.
  4. Comments: This is an adaptation of pancakes served in the Harvey Houses, dining facilities which were established on the Santa Fe railroad line from Kansas to California. The waitresses were called Harvey girls. These unique pancakes were originally made the size of a silver dollar.
