  1. Cream the yeast with the water.
  2. Sift the flour and salt into a bowl make a well in the centre and pour in the yeast oil and lowfat milk.
  3. Mix to a hard but pliable dough adding a little more lowfat milk if necessary.
  4. Turn onto a floured surface and knead vigorously for 5 min.
  5. Place in a clean basin cover and leave to rise in a hot place till doubled in bulk.
  6. Knead the dough lightly then cut in half.
  7. Roll each piece into a 20 to 23 cm circle.
  8. Place the circles on oiled baking sheets and brush with some of the oil.
  9. Cover with tomatoes and sprinkle with the herbs and salt and pepper to taste.
  10. Add in the cheese slices then top with the Parmesan and olives.
  11. Spoon over the remaining oil and leave to rise in a hot place for 30 min.
  12. Bake in a preheated warm oven 220 degrees C (425 degrees F) Gas Mark 7 for 25 to 30 min.
  13. Serve immediately.
  14. Serves 4
