- 1/4 cup (30 grams) cornstarch
- 2/3 to 3/4 cup (134 to 150 grams) sugar, adjusted according to sweetness of blueberries
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 2 teaspoons lemon zest
- 6 cups (850 grams or 30 ounces) fresh blueberries
- 1 tablespoon cold unsalted butter, cut into small squares
- 1 egg yolk
- 1 tablespoon cream
- Additional sugar for topping crust (coarse sugar is a nice option)
