Being a sushi and sashimi fan, I almost always prefer my salmon raw -- especially fatty salmon. Not much prep time required! But even when cooking this pink fish, not much time is needed. To overcook it would be to ruin it. I've had cooked salmon in many different iterations -- from salmon omelets to salmon baked in pesto sauce to salmon with pasta. Today, I thought of preparing something sweet with my salmon, and what better way do it than with honey. So here it is, my recipe for honey-glazed salmon.

  1. Pre-heat oven to 350 degrees F.
  2. In a small pan, combine honey and apple juice. Cook over medium-high heat, bringing it to a boil until the liquid reduces by half. Remove from heat and let cool.
  3. Place salmon fillet on a shallow bowl, skin-side down. Sprinkle salt and pepper to taste over the flesh side of the salmon.
  4. Pour the honey juice over the salmon and let stand for 5 minutes. Turn the salmon over the let stand for another 5 minutes.
  5. Place the fillet, skin side down in an oven-safe dish, place in oven and cook for about 12 minutes, occasionally brushing the fillets with the remaining glaze. Remove from heat.
  6. Transfer fillets to a serving platter. Sprinkle salmon with lemon juice. Serve with a side of your favorite steamed vegetables and rice. Garnish with fresh lemon slices.
