Receta Indian Rice Curry

Ingredientes
- 2 tsp extra virgin olive oil
- 1 sm onion chopped
- 1/4 c. minced tart apple
- 2 tsp curry pwdr
- 1 dsh cayenne
- 4 c. cooked brown rice
- 2 c. canned chick peas liquid removed
- 1 Tbsp. lemon juice Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Heat the oil in a heavy skillet over medium heat. Add in the onion and saute/fry for 3 min. Add in the apple and saute/fry for 3 more min. Add in the curry pwdr and cayenne and coat the apple and the onion.
- Add in the cooked rice and chickpeas. Cook through till the rice and beans are warm. Sprinkle with lemon juice and serve.
- This recipe yields 6 servings.
