Ingredientes

  • 1kg chuck steak (or brisket or stewing steak) cut into 4cm cubes
  • 3 Tbsp plain flour for coating
  • 3 Tbsp vegetable oil
  • 1 large onion sliced
  • 3-4 carrots, thinly sliced
  • 2 celery sticks, thinly sliced
  • 150g button mushrooms, roughly chopped
  • 2tsp sugar
  • 1tsp English mustard
  • 1 Tbsp tomato puree
  • 1x3 inch strip of orange rind
  • 600ml Guinness or other dark stout
  • bouquet garni (bundle of herbs including parsley, thyme and a bay leaf)
  • salt & pepper
  • a roll of ready-made puff pastry
