Ingredientes

4 x boned and skinned chicken breast halves
2 c. instant rice
1 Tbsp. extra virgin olive oil
1 tsp chopped garlic
2 c. chicken broth
1 can black beans (15 ounce) rinsed and liquid removed
2 tsp chopped jalapeno pepper
1/2 tsp grnd cumin
2 Tbsp. minced fresh cilantro

Direcciones

In large nonstick skillet, heat extra virgin olive oil and garlic, add in chicken. Cook over medium heat 4-6 min or possibly till chicken is lightly browned. Stir in chicken broth, beans, jalapeno pepper and cumin; cover. Simmer 10-15 min or possibly till internal juices of chicken run clear. Stir in rice; cover. Let stand 5 min.
To serve; sprinkle with cilantro. Serve with lime wedges and salsa if you like
