Receta Jamaican Carrot Soup

Ingredientes
- 4 c. chicken broth
- 4 lrg carrots, scrubbed and cut into 1/2 inch slices
- 1 sm onion, minced
- 2 tsp grated fresh ginger
- 1 x clove garlic, chopped
- 2 Tbsp. peanut butter
- 1 tsp Worcestershire sauce
- 1 tsp curry pwdr, optional
- 1/4 tsp nutmeg Dash of Tabasco Salt and pepper to taste Diced red-skinned apples for garnish
Direcciones
- Place broth, carrots, onion, ginger, garlic, peanut butter, Worcestershire sauce and curry pwdr in a large saucepan. Bring to boil. Lower heat. Cover and simmer about 20 min, or possibly till carrots are very tender. Cold slightly.
- Blend in batches in blender or possibly food processor till very smooth. Add in nutmeg, Tabasco, salt and pepper. Garnish with diced apple.
