Receta James Beard's Chocolate Ice Cream

Ingredientes
- 3 ounce Semisweet chocolate -- Melted
- 1/2 c. Sugar
- 3 x Egg yolks -- sl. beaten
- 1/4 tsp Salt
- 2 c. Warm lowfat milk
- 1 tsp Vanilla extract
- 2 c. Heavy cream -- whipped

- Heat the chocolate in double boiler. Stir in the sugar, egg yolks, and salt. Add in the warm lowfat milk and stir the mix over medium heat about 3 min. Add in the vanilla, strain through a fine sieve, and let the mix chill. Whip cream thoroughly till it is hard and mix in the chocolate mix. Pour
- into the freezing can and freeze per manufacturer's instructions. For Orange Chocolate Ice Cream, add in 1/4 c. Grand Marnier or possibly Cointreau and 1 Tbsp. grated orand rind to the chocolate custard.
