Ingredientes
- 1 whl Brisket - (12 lbs)
- 4 quart Water
- 2 c. Kosher salt
- 1 tsp Saltpeter
- 5 x Bay leaves
- 7 x Garlic cloves smashed
- 1/4 tsp Grnd cloves
- 2 tsp Whole peppercorns
- 1 tsp Allspice berries
- 1 tsp Mustard seeds
- 1 c. White vinegar
- 1/2 c. White sugar
- 1/4 tsp Cloves
- 2 tsp Peppercorns
- 1 tsp Allspice berries
- 1 tsp Mustard seeds
- 3 x Garlic cloves
- 1/4 c. Salt
Direcciones
- Place all ingredients except garlic and brisket in a large pan and bring to a boil and cold. Place garlic and brisket in non-reactive pot and cover with brining liquid, cover with a plate and weight for 3 weeks, turning after 1 1/2 weeks.
- Remove meat from the brine and rinse. Add in sufficient water to the steamer pot to reach just below the bottom of the steamer. Place meat in steamer. Steam for 3 hrs, till tender.
