Receta Judith's vegetable dish

Ingredientes
- 3 Tbsp extra virgin olive oil
- 2 lbs thinly sliced onion
- 1 1/2 Tbsp minced garlic
- 1 lbs frozen petite limas
- 2 Tbsp basil
- 1 lbs frozen petite peas
- 2 lbs sliced mushrooms or zucchini
- 2 lbs sliced tomatoes
- 4 lbs coarsely chopped romaine lettuce
- 3 packets salt-free chicken or vegetable
- 6 oz grated parmesan cheese
- pepper to taste
Direcciones
- In a large, wide, heavy ot, heat oil. Layer sliced onions on the botton, then garlic, limas and basil.
- Turn heat to medium, cover, and cook 10 minutes or until onions are soft.
- Stir the mixture and add, in layers, the peas, mushrooms/zucchini, tomatoes and lettuce.
- Srinkle with bouillon, cover and cook on high for 15 minutes.
- Cheak occasionally and lower heat if it seems too hot - you're just trying to steam the vegetables until tender. Stir. Add pepper to taste and sprinkle 1/2 tsp of parmesan cheese on each serving. Serve immediately.
