Receta Kaffir Lime Leaf, Black Eye And Aduki Bean Croquettes

Ingredientes
- 4 1/2 ounce Black eyed beans, cooked
- 6 x Kaffir lime leaves
- 1 x 1 in piece lemon grass
- 4 1/2 ounce Aduki beans, cooked
- 1 x 1 in piece root ginger, minced
- 1 x Red chilies, (1 to 2) Groundnut oil for frying
Direcciones
- 1. In a food processor combine all the ingredients and blend till a rich paste has developed.
- 2. Form small medallions from the paste.
- 3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 min.
- NOTES : I bought these delicious croquetres while shopping down one of the busy streets in Chiang Mai. I have adapted the recipe to create a more interesting balance of flavours.
