Receta Kale With Bacon And Garlic

Ingredientes
- 1 lb kale coarse stems discarded, leaves washed, coarsely minced
- 4 ounce sliced bacon cut crosswise into 1/2" pcs
- 1 sm onion finely minced
- 1/4 tsp crushed red-pepper flakes
- 4 x garlic cloves finely minced
- 1 Tbsp. red wine vinegar
- 1/2 c. grated Parmesan cheese
Direcciones
- In a large pot of lightly salted boiling water, cook kale till tender, about 10 min. Drain; reserve 1/2 c. cooking water. Rinse kale under cool water and pat dry.
- In a large skillet, cook bacon over medium heat till crisp. Remove bacon from pan and set aside. Reduce heat to low; add in onion and pepper flakes to bacon drippings. Cook 10 min, till onion is tender and lightly golden brown. Add in garlic during last minute of cooking time. Drain off excess fat.
- Return kale, reserved cooking water and vinegar to skillet. Mix well and heat through. Transfer to a serving dish and sprinkle with Parmesan.
- This recipe yields 6 servings.
