Ingredientes

  • Part (A): 4cm ginger, 5 buah keras Part (B): 20 dry chillies, 10 fresh red chillies, 20 shallots Part (C): 2 tomatoes (quartered), 1 big onion (quartered)
  • 600 gm mutton, cut into big cubes and wash with a handful of flour. Add in (A) with 1 c. of water and pressure cook for 30 min.Remove from pressure cooker.Keep the stock and mix (A) with (B).
  • 2 Tbsp. ketumbar pwdr
  • 2 Tbsp. thick soya sauce
  • 2 stalk serai, sliced thinly
  • 10 x daun limau purut
  • 1 x lime
  • 6 Tbsp. oil
  • 1 x salt to taste
  • 1 pch sugar

Direcciones

  1. MethodGRIND (A) and (B) finely. Heat oil in a deep saucepan and fry the serai. Add the grnd spices (A and B) and ketumbar pwdr. Keep on stirring over low heat.
  2. Stir in cooked mutton with salt to taste and a healthy pinch of sugar and mix well. Add the daun limau purut and thick soya sauce.
  3. Add (C) and pour in half c. of water. Cook for 25 to 30 min. Turn off the heat and squeeze in the lime juice.
