- 3 cups chicken stock
- 2 15-ounce cans chickpeas (garbanzo beans)
- 6 ounces dried apricots, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 cup roasted, unsalted, and roughly chopped pistachios
