Receta Layered Southwestern Salad

Ingredientes
- 1/3 c. minced fresh cilantro
- 1/2 c. lime juice
- 1/2 c. extra virgin olive oil
- 1/2 c. lowfat sour cream
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 pkt romaine lettuce - (16 ounce) shredded
- 5 x plum tomatoes minced
- 1 can black beans - (15 ounce) rinsed, liquid removed
- 1 sm purple onion minced
- 1 pkt shredded Mexican 4-cheese blend - (8 ounce)
- 1 can whole kernel corn with red and green peppers - (15 ounce) liquid removed
- 1 can sliced ripe olives - (6 ounce) liquid removed
- 2 c. crushed tortilla chips Fresh cilantro leaves for garnish
Direcciones
- Process first 7 ingredients in a blender or possibly food processor till smooth, stopping to scrape down sides.
- Layer lettuce and next 7 ingredients in a 3-qt glass bowl. Pour vinaigrette over salad just before serving, and gently toss. Garnish, if you like, and serve immediately.
- This recipe yields 8 to 10 servings.
