- 1/2 cup powdered sugar
- 1/2 cup vegetable oil

- 1/2 teaspoon cream of tartar
- 2 cups flour
- 2 jars Lemon Curd (or cherry pie filling or chocolate pudding or fresh fruit!)

,%20Potato%20Salad,%20Deviled%20Eggs%20(this%20link%20takes%20you%20to%20my%20Spider%20Egg%20recipe%20that%20I%20make%20for%20Halloween,%20just%20don't%20put%20on%20the%20olives%20or%20the%20%22legs%22%20and%20you'll%20have%20the%20best%20tasting%20Deviled%20Eggs%20ever...or%20so%20I'm%20told!),%20fresh%20fruit,%20hummus,%207-layer%20dip,%20chips,%20pickles%20and%20Lemon%20Cookie%20Tarts%20for%20dessert...oh,%20we%20also%20had%20Salted%20Nut%20Bars%20as%20our%20dessert's%20dessert.%3C/p%3E%3Cp%3EIt%20was%20quite%20a%20feast...by%20the%20time%20we%20were%20finished%20the%20marine%20layer%20had%20disappeard%20and%20the%20skies%20were%20bright%20blue...I%20took%20about%20a%20hundred%20pictures...and%20these%20were%20my%20two%20best%20shots!!!%20%20For%2020%20years%20we've%20been%20watching%20the%20Blue%20Angels%20fly%20over%20Lake%20Washington%20-%20it's%20always%20the%20first%20weekend%20in%20August%20and%20the%20highlight%20of%20my%20summer!%3C/p%3E%3Cp%3ENow,%20about%20those%20tarts...they%20are%20dang%20good!%20%20Cookie%20shells%20filled%20with%20store-bought%20lemon%20cured,%20topped%20with%20fresh%20raspberries%20-%20but%20you%20could%20fill%20the%20cookie%20shells%20with%20a%20lot%20of%20different%20things,%20they%20are%20very%20adaptable!%3C/p%3E%3Cp%3ESweet%20cookie%20dough%20is%20flattened%20with%20the%20back%20of%20a%20tablespoon%20to%20form%20the%20shells.%20%20When%20they%20bake,%20they%20puff%20up%20a%20bit%20so%20after%20baking%20they%20are%20flattened%20again%20and%20then%20left%20to%20cool.%20%20So%20easy%20to%20do%20and%20they%20freeze%20well%20at%20this%20point%20so%20you%20can%20make%20the%20shells%20ahead%20of%20time%20and%20have%20them%20on%20hand%20to%20fill%20with%20fresh%20fruit%20or%20pudding%20or%20ice%20cream%20for%20unexpected%20guests!%3C/p%3E%3Cp%3EThe%20cookie%20shells%20are%20quite%20sturdy,%20too,%20so%20they%20transport%20well%20-%20they%20won't%20crumble%20on%20you.%20%20You%20can%20bite%20into%20them%20or%20use%20a%20fork%20-%20either%20way,%20dang%20good!%3C/p%3E%3Cp%3EIn%20a%20food%20processor%20or%20an%20electrix%20mixer,%20combine%20sugar,%20powdered%20sugar%20and%20butter%20and%20beat%20until%20creamy.%20%20Add%20in%20oil,%20egg%20and%20extract%20and%20mix%20well.%20%20In%20a%20small%20bowl,%20combine%20baking%20soda,%20cream%20of%20tartar%20and%20flour%20and%20whisk%20together.%20%20Add%20flour%20mixture%20to%20sugar%20and%20butter%20mixture%20and%20mix%20until%20just%20combined.%20%20Remove%20from%20bowl%20and%20turn%20out%20onto%20plastic%20wrap.%20%20Form%20a%20ball,%20cover%20with%20plastic%20wrap%20and%20refrigerate%20for%2015%20minutes.%20%20Spray%20or%20grease%20mini-muffin%20pan.%20%20Measure%201%20tablespoon%20of%20dough,%20roll%20into%20a%20ball%20and%20place%20one%20ball%20into%20each%20hole%20of%20the%20mini-muffin%20pan.%20%20Using%20back%20of%20a%20tablespoon,%20press%20dough%20up%20the%20sides%20and%20down%20in%20the%20bottom,%20making%20a%20uniform%20%22dent%22%20in%20the%20center.%3C/p%3E%3Cp%3EBake%20at%20350%20degrees%20for%209%20minutes%20or%20until%20dough%20is%20slightly%20firm%20but%20not%20yet%20set.%20%20Remove%20from%20oven,%20cookie%20shells%20will%20be%20puffy.%20%20Working%20quickly,%20use%20the%20back%20of%20the%20tablespoon%20again%20and%20press%20gently%20making%20a%20shallow%20indentation%20in%20each%20shell.%20%20Don't%20let%20them%20cool%20or%20they%20will%20be%20harder%20to%20shape.%20%20Return%20to%20oven%20for%20an%20additional%203%20to%204%20minutes%20or%20until%20edtges%20of%20shells%20are%20firm%20and%20golden.%20%20Let%20cool%20in%20pan%20for%205%20minutes.%20%20Carefully%20remove%20from%20pan%20and%20trasnfer%20to%20cooling%20rack.%20%20Cool%20completely%20before%20filling.%20%20Can%20be%20made%20to%20this%20point%20and%20then%20frozen,%20but%20thaw%20to%20room%20temperature%20before%20filling.%3C/p%3E%3Cp%3EPlace%20a%20small%20amount%20of%20lemon%20curd%20into%20each%20shell,%20add%20one%20fresh%20raspberry.%20%20Sprinkle%20with%20powdered%20sugar.%20%20(I%20mashed%20the%20remaining%20raspberries%20I%20had%20and%20then%20spoon%20them%20over%20the%20tops%20of%20my%20tarts.)%20%20Makes%2030%20tarts.%3C/p%3E%3Cp%3EPhotos%20below%20taken%20by%20Aaron%20Lavinsky%20of%20The%20Seattle%20Times.%20%20Love%20those%20Blues!%3C/p%3E%3Cp%3EBoats%20tied%20to%20the%20log-boom%20in%20anticipation%20of%20the%20Hydro%20races,%20Mt.%20Ranier%20in%20the%20background%20and%20the%20Blues%20overhead...it%20was%20truly%20a%20%22pinch%20me%20I'm%20dreaming%20kind%20of%20weekend!%22%3C/p%3E){kind=link}
