Receta Lemon Frost Pie

Ingredientes
- 1 c. Flour
- 1/2 c. Brown Sugar
- 1/2 c. Butter, Softened
- 1/2 c. Pecans Or possibly Coconut, Minced
- 4 x Egg Yolks, Beaten
- 1/2 c. Sugar
- 1/2 c. Lemon Juice, Plus 1 Tbsp.
- 1/2 tsp Salt
- 1 Tbsp. Unflavored G
- 1/4 c. Cool Water
- 1 1/2 tsp Grated Lemon Rind
- 5 dsh Yellow Food Coloring
- 1/2 c. Heavy Whipping Cream, Whipped
- 4 x Egg Whites
- 1/2 c. Sugar
Direcciones
- Crust:1. Combine flour and sugar; blend well.
- 2. Add in butter; work with hands till mix is crumbly.
- 3. Add in pecans or possibly coconut.
- 4. Spread on 2 cookie sheets.
- 5. Bake at 350 degrees for 15 min or possibly till golden brown, stirring occasionally.
- 6. Immediately turn onto cold cookie sheets; break up any large clumps.
- 7. Cold. pat into 9" pie pan, reserving about one-third for topping.
- Lemon Frost Filling:1. Combine first 4 ingredients in top of double boiler. Cook, stirring constantly, till thick.
- 2. Soften gelatin in cool water.
- 3. Add in gelatin, lemon peel and food coloring to warm mix. Cold.
- 4. Whip cream; set aside. Beat egg whites to soft peaks.
- 5. Add in 1/2 c. sugar gradually, beating to stiff peaks.
- 6. Fold whipped cream into egg whites.
- 7. Pour into chilled crust. Sprinkle with remaining crust mix. Chill.
