Receta Lemon Pomegranate Couscous
This was super easy and it was super delicious! I cheated too and made mine in the microwave.
Ingredientes
- about 1/2 c dried pomegranate seeds (you could use fresh if they're in season)
- 7 ounces couscous
- 9 ounces water
- 1/4 c lemon juice
- Several turns around the bowl of olive oil
- handful of mint, chopped
Direcciones
- Mix the couscous, lemon juice, dried pomegranate, and olive oil in the a bowl.
- Microwave the water until boiling, about 5 minutes.
- Pour into the couscous, stir and cover tightly with plastic wrap. Allow to sit for 5 to 10 minutes until the couscous gets puffy.
- Stir in the mint.
