Receta Bacon Cupcakes
To quote Tyler Florence: "Bacon should be an honorary vegetable." In which case, I argue that these are a health food.
If you have a favorite spice cake recipe, feel free to subsitute that in. I think these would be great with an apple spice cake also.

Ingredientes
- Cake:
- 2 1/2 cups flour, sifted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 cup butter, soft
- 1/2 cup light brown sugar, firmly packed
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups buttermilk
- Bacon - 6 to 8 strips; depending on your love of bacon.
- Frosting:
- 1/2 cup butter, room temp.
- 8 ounces cream cheese, room temp.
- 2 teaspoons Mapleine (or other artificial maple flavor; I use pure maple syrup but you will need to add more. Closer to a tablespoon and a half for the flavor to really come out.)
- 4 cups powdered sugar
- Milk as needed to achieve consistency

- For the cake:
- Preheat oven to 350.
- Crisp your bacon and drain well. I like to cut mine into pieces and then get them nice and crispy. The cake softens them slightly so I don't recommend under cooking.
- Sift together all the dry ingredients and set aside.
- Cream together the butter and sugars until light and fluffy.
- Add the eggs one at a time beating well after each. Stir in the vanilla.
- Add the dry ingredients in three small batches, alternating with the buttermilk and blending well after each addition. (dry, wet, dry, wet, dry)
- Stir in the bacon bits!! Set some aside for garnish later or just make more.
- Divide the batter evenly into greased and lined muffin tins, filling each about 3/4 of the way up.
- Bake for about 20-25 mins. Until the top springs back to the touch and a toothpick comes out clean.
- Cool completely.
- For the Frosting:
- Cream together room temp butter and cream cheese until well blended and fluffy.
- Mix in the maple syrup and powdered sugar.
- Add milk a little at a time to acheive desired consistency. If you go to far, add more powdered sugar to bring it back together.
- Garnish with the left over bacon bits.
- Try not to eat all of them in one sitting.
