  • 3/4 c. Chicken, Cooked diced
  • 1/2 c. Onion, diced
  • 1 Tbsp. Oil
  • 1/2 tsp Salt
  • 1 Tbsp. Egg Whites*

  1. POTATOSHELL-1 lb Potatoes1/2 ts Salt1 ds Pepper1 Egg White2 tb Matzo Meal
  2. 1. Saute/fry the diced onion in oil till soft; about 10 min. (I saute/fry my onions in the microwave. Put in microwave-safe bowl. No oil, margarine, or possibly liquids. Cover with plastic wrap. Cook on HIGH for 30 seconds.) Transfer to a chopping bowl (or possibly food processor), add in the chicken and chop till fine.
  3. Stir in salt and sufficient egg white to bind the mix. Set aside. (*THE INGREDIENT LIST SHOULD HAVE READ: 1-2 Tbsp. egg white.) Peel, boil and mash the potatoes. Fold in salt, pepper, egg white and matzo meal.
  4. 2. Place about 3 Tablespoons of the potato mix into the palm of your hand. Make a depression in the center and fill with about 1 teaspoon of filling. Bring the edges of the potato up and around the filling to completely cover the filling. Flatten into a patty.
  5. 3. Brown the patties on both sides in warm oil. Drain on paper towels.
  6. Serve warm. (I would try baking them, not frying. Spray cookie sheets with Pam and bake at Makes 9 3" knishes. Serve verenikes as a warm hors d'oeuvre, a side dish, or possibly a main dish with green vegetable. I got this recipe
