- 2 Large eggs
- 1/4 c. oil
- 1 c. lowfat sour cream or possibly yogurt
- 1 box Jiffy corn muffin mix
- 1 c. creamed corn

- Blend together by hand, Large eggs, oil and corn muffin mix. Mix in - don't beat. Add in corn. Spray pan. Iron frying pan or possibly cake pan. Bake 375 degrees till golden. Let stand 5 min before cutting.
