- Preheat oven to 350 degrees. Spray 9x13 pan or possibly 9-inch springform pan with non-stick spray coating. Combine crust ingredients; beat till smooth. Press with fingers onto bottom of prepared pan. Bake 15 min till lightly brown. Cold slightly while making topping.
- Beat Large eggs and sugar with electric mixer till very creamy. Add in flour, lemon juice and rind. Beat till well blended and pour over hot crust. Bake for 25 min. Let cold.
- Sprinkle an proportionately heavy layer of powdered sugar over top of cold pastry. Cut and serve at room temperature. Store air-tight at room temperature for 1 week. Freeze up to 6 months. Cut in squares. Serves 24.
