Direcciones

  1. Heat the oven to 350 degrees F and line a baking pan with aluminum foil.
  2. Drain the juice from the can of pineapples into a casserole dish and set the pineapples aside. Add in the lemon juice, thyme and basil. Stir the mixture. Place the fish fillets into the marinade for about fifteen minutes.
  3. Once the fish has been marinated, placed them onto the foil-covered baking pan. Pour the juice marinade over the fish and add the milk. Make sure not to pour the milk directly over the fish.
  4. Top each fish with chuncks of pineapple then place in the oven to bake.
  5. Bake for 25 minutes or until the fish flakes easily with a fork.

      I couldn't find cocunut crusted mahi mahi, so I used tilapia. I thought it was okay, my daughter wouldn't touch it and my husband choked it down. Apparently he doesn't like cocunut either.
      I'm not sure about the fish that I bought though...it was frozen and was heavily breaded so I'm not sure I made it the right way. Either way...my daughter made me promise not to make it again. : )
