  • 2 c. thinly-sliced mushrooms (abt 1 1/2 lbs)
  • 1/2 c. thinly-sliced leeks (white part only)
  • 6 x flounder">sole or possibly flounder fillets (4 to 6 ounce ea)
  • 3/4 c. dry white wine
  • 1/4 c. low-salt chicken broth or possibly clam juice
  • 1/2 c. lowfat milk
  • 2 Tbsp. all-purpose flour
  • 6 ounce shrimp meat or possibly crabmeat
  • 1 1/2 tsp minced fresh dill weed (or possibly 1/2 tspn dry dill weed) Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. shredded Swiss cheese - (2 ounce) (or possibly 1/4 c. shredded or possibly grated Parmesan cheese) Dry dill weed or possibly sprigs of fresh dill for garnish

Direcciones

  1. Preheat the oven to 400 degrees. Arrange an even layer of mushrooms and leeks in a 9- by 13-inch baking dish. Rinse the fish and pat dry. Tuck thin tail ends under to make each fillet an even thickness and place them on top of the vegetables. Combine wine and broth and pour over fish. Cover the pan with foil and bake till the fish is opaque on surface but does not flake, about 10 min.
  2. Carefully drain the liquid from the baking dish into a medium-size saucepan; set the baking dish with fish and vegetables aside. Boil the liquid till reduced to 2/3 c.. Meanwhile, whisk the lowfat milk into the flour in a small bowl. When liquid is reduced, whisk in flour mix over medium heat and stir till the sauce bubbles, 2 to 3 min. (If making ahead, see note.)
  3. Stir the shrimp and dill into the sauce; season with salt and pepper if you like. Spoon the sauce over the fish, covering it completely. Return to the oven and bake, uncovered, till the sauce is bubbly and fish is opaque through the thickest part, 12 to 15 min more. Sprinkle the cheese on top and return to oven till melted, about 2 min. Transfer to hot plates and garnish with a sprinkling of dill.
  4. Note: If making ahead, cook the fish and sauce to this point, then cover separately and chill for up to 24 hrs. To finish the dish, stir the shrimp, dill, salt and pepper into sauce. Spoon over fish, covering completely. Cover with foil and bake 10 min. Uncover and continue baking till warm throughout, about 8 to 10 min more. Sprinkle cheese on top and return to oven till melted, about 2 min. To serve, see above.
